Well everybody, the school year is officially in full gear and we, as students, drown in homework, unable to resurface until the end of the school year. The time to go out to eat and hang out with friends is slowly withering away.

There’s no more Portillo’s on Saturday nights, no more Dairy Queen on Wednesdays, no more Chick-fil-A on Fridays … I’ll stop now because I don’t want to make you feel too depressed; however, I have found the perfect solution.

I found the most perfect recipe for you to get all the satisfaction of a delicious restaurant dessert while not even leaving the house. Can you guess what it is?

Copycat Potbelly Oatmeal Chocolate Chip Cookies.

These cookies have all the moisture and softness of a freshly baked Potbelly cookie, yet still manages to be easy, take little time and is actually a single serving — to anyone who’s eaten at Potbelly’s, y’all know what I’m talking about.

Here’s a little tip for you: bring these cookies into your English class and you will look super cool.

Read below for ingredients and instructions on how to be the coolest cat in school.

1 cup butter

1 cup white sugar

1 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

2 ½ cups oats (of your choice)

2 cups flour

1 ½ teaspoons baking soda

1 teaspoon salt

A whole heck of a lot of chocolate chips

  1. Preheat the oven to 350°
  2. In a large bowl, cream the butter, white sugar and brown sugar. Add in the eggs, one at a time, beating after every addition. Then, mix in the vanilla extract.
    3. In a separate, medium bowl, combine the oats, flour, baking soda and salt. Once mixed, slowly add to the butter mixture. Do this until it is all blended together, then mix in the chocolate chips.
  3. Place in the refrigerator for 30 minutes. Form the dough into medium sized balls and place on cookie sheets. Bake for 13 minutes.
  4. Eat and ENJOY!
